
Nutrition Challenge: Week 3 Check In
Well we've done it again...another week in the books! It'll be turkey time in just over a week which means you will have made it through the whole 29 days challenge! Keep up the great work for our last week! Hopefully by now many of you have become accustomed to your new way of eating and have found a new love and appreciation for "real foods" and yummy recipes found on our wikipage. If you haven't had a chance to browse the recipes get your butt over to the wiki page "Apex Recipes" (link is found under the foodee project meal of the day on the Right side of our website). There are oodles of yummy snacks and desserts. Teresa's ("Tee") yummy pumpkin chicken recipe filled the bellies at the Nice household this week, while Angie's Apple muffins found there way to mouths of many including Jane, Elyse, and Sarah to name a few :) You can't go wrong with these recipes, they are the best of the best, tried and true!
It looks like we'll be needing more recipes to get us through our second leg of the challenge. It is official....this challenge just got kicked up a notch BANG! That's right, throwing it out there on her way out our door, Julia Spencer (who sadly we said goodbye to last week as her family moved to North Carolina) said let's make it a 60 day challenge and take this sucker through Christmas (ok I added some of that). Alot of people are on board including Russ himself who added that he will only be doing the "food" part of the challenge during this next 30 days. It's all good! So start thinking if you want to continue your challenge or for some maybe start with us on this next adventure taking us through Christmas eating clean.

My Wife is a Saint. She cooks the most delicious dinners and desserts for me. She really helps to keep my spoon out of the half gallon ice cream tub. I must say the picture she posted is the only cheat I have done throughout my start date of Nov 1.
Each morning my eggs are being eaten without my half slice of toast or english muffin and during my lunch I no longer eat my organic cane sugar filled luna bars. Thanks to all of you who have added to this wiki recipe page on the side bar. It has my wife in the kitchen morning and night and it gives me snacks before bed and snacks at lunch. Keep up the good work everyone.
I still have to do my 50 gi janes! Maybe LaRynn has cheated again and she can join me.
Russ keep up the stellar work at APEX and in the kitchen. Looking slimmer and your squat to your beach chair is looking spot on.
Bussom and Zimnock have popped their first abdominal muscles visible to the naked eye. Good job guys.
Time to go eat a home cooked meal right now.
I'll do the 50 GI's with you! CONGRATS Mr. Bussom and Alex! :) Also, I found these sugar/fat free candies at work. Their ingredients are: sorbitol, gum arabic, citric acid, natural & artifical flavoring, and parve. Are these safe to eat?
Can't wait for Thanksgiving...apple pie, rolls with butter, mashed potatoes ahhhhh!
The best sayings I've heard to help you eat clean was "if it has an ingredients list stay away from it" but if you can't not eat somethings then narrow down the options by "if you cant pronounce don't eat it".
I wish I could have been a part of this but I was traveling too much so it would have been impossible/I didn't have the will power haha. For the most part though I try my best to staying away from grains, legumes, and dairy (minus kefir and whey protein). So hopefully I can help with some recipes!

I'll do some GI Janes with ya, Josh. I'll be in for the Thanksgiving wod.... I haven't done my consequence yet either.
Still doing well... Looking forward to stretching the challenge to 60 days. I feel so much better, my next step is to focus on eating more zone as I settle into our new home here, I haven't been as good with how I eat as I have with what I eat.
Anyone else read that US Congress has affirmed PIZZA as vegetable in national school lunch programs? WTF is going on. I am SO thankful Brynley loves eating Paleo and is aware of it's benefits. Just when I thought things were slightly shifting.
I have fought off some serious temptations these last few days...wonderful people bring over dinner and cookies...I haven't touched one of them...been close though....I need an intervention!!
on another note, guess what I got in the mail today...........I've been waiting for them for a long time....hint: nano nano nano !!
